Start by finely chopping the chives.
Next, finely chop the tomatoes into round slices.
Into a bowl, add the eggs, the salt, the black pepper, mix all the ingredients very well.
After doing that, into a skillet, add the unsalted butter, let it melt, pull apart the slices of bread and put them in the skillet, stir well until golden brown.
Transfer these slices of bread to the bowl filled with the eggs and add the chopped chives, mix well.
Next, into the skillet, add a drizzle of olive oil and spread it out, pour in all the egg-bread mixture and let it fry until golden brown.
Flip and top it the tomato sauce, the mozzarella cheese, the chopped tomatoes, and add parsley to taste. Cover the skillet and let it all fry until the cheese fully melts.
Serve.
