Start by cutting the puff pastry dough into a circle. To make this process easier, use a large pan lid.
Now, cut the dough into 8 equal-sized slices, just like you would cut a pizza.
Spread the cream cheese all over each slice.
Now roll up each slice from the larger end to the smaller end.
Twist each piece of dough shaping it into a half-moon.
Repeat this process until every piece of dough has been used.
Transfer all of them to a nonstick baking tray.
Brush one egg yolk over all the croissants.
Top each of them with black sesame seeds to taste.
Take them to a preheated oven at 180°C (356°F) and bake for 20 minutes.
Meanwhile, cut the avocado into thin slices and set aside.
Also cut the slices of ham into thin slices.
Once the croissants have baked through, fill them with the avocado and the ham slices.
Serve.
