Baked Cod Fish

Start by drying the desalted cod very well, then cut into smaller pieces.Once you’ve done that, coat these pieces very well in wheat flour and set aside.In a skillet, add olive oil or oiluntil it covers the whole bottom, and once the oil is hot enough, fry the cod for 1 minute on each side.Remove from the hot oil and soak up the excess fat on a plate lined with paper towels.In another large skillet, add enough vegetable oil until it covers the whole bottom. And once the oil is hot enough, add the potatoes chopped into thin round slices, fry until golden brown.Remove them from the oil and soak up the excess fat one a plate lined with paper towels.Now, in another skillet, add one drizzle of oil and add the onion chopped into thin strips.Stir-fry until slightly golden brown.Add the peeled red and bell peppers chopped into thin strips, add one pinch of salt, stir-fry for 2 minutes.Add the sweet paprika and the dry white wine, stir for 5 minutes.Remove from the heat and set aside.Now, in a large baking tray, add one drizzle of olive oil and spread evenly with a brush.Line the bottom of the baking tray with all the fried potatoes, add the pieces of cod and the onion-pepper stir-fry all over it.Take to a preheated oven at 180°C (356°F) and bake for 15 minutes.Serve.

  • 1 kg of Cod Fish
  • Wheat Flour for Breading 
  • 4 Potatoes 
  • 2 Onions 
  • 1 Red Bell Pepper 
  • 1 Green Bell Pepper 
  • 1 Pinch of Salt 
  • 1 Teaspoon of Sweet Paprika 
  • 120ml of Dry White Wine
