Eggs
Start by chopping the tomatoes into round slices and set aside.
Into a skillet over medium heat, add the unsalted butter and spread until melted.
After that, place the tomato slices over the butter, one next to the other.
Season each slice with salt and black pepper.
Let it cook for 5 minutes.
Into a bowl, add the eggs and whisk them well.
Season them with salt, black pepper, garlic powder and dried parsley, mix all ingredients together very well and transfer this mixture to the skillet with the tomatoes.
Let it cook for 5 minutes over low heat.
Meanwhile, cut the ham slices into small squares.
Grate the mozzarella cheese and set aside.
Once the eggs have cooked through, add the ham, the grated mozzarella and some oregano to taste, cover the skillet and let it cook for 3 minutes.
Serve.
