In a pan filled with boiling water, add the beaten eggs and let them cook for 5 minutes.
Remove the eggs from the water using a fine mesh strainer and set aside.
Next, in a skillet, add one drizzle of oil, the onion chopped into small cubes, the crushed garlic cloves and sauté until slightly wilted.
Add the green and red bell peppers chopped into small cubes and the tomato also chopped into small cubes, sauté for 5 minutes.
Season with the salt, the black pepper and the cumin, stir until incorporated.
Now, to arrange the recipe, put all the eggs we made in a nice serving dish and spread well. Top with all the sautéed vegetables.
Serve.
