Start by grating the peeled medium potatoes, transfer them to a bowl filled with water and set aside.
Chop chives to taste and grate 100g of ham, set aside.
Drain the water from the potatoes and transfer them to a dry bowl, add the chives and the ham, add the egg whites, season with salt, black pepper and wheat flour, mix well until combined.
In a skillet over low heat, put a drizzle of olive oil and spread it all over the skillet.
Get 1 very full tablespoon of the potato mixture and place it in the skillet, leaving it in a round shape.
Make a hole in the middle of this mixture, get the egg yolk and fill this hole with it.
Let it fry on low heat for 3 to 5 minutes, after that, flip it and let the other side cook for another 3 to 5 minutes.
If you'd like to brown it a bit more, flip it one more time and let it cook for a few more minutes.
Repeat this process until you've used up the whole mixture.
Put on a plate and serve.
