Start by cutting the baby potatoes into thin strips without cutting them all the way through.
Next, add all of them to a large pot and cover them with water.
Add the salt, turn on the heat to medium-low and let them cook for 10 minutes.
After this time has passed, drain all the water from the potatoes.
After that, in a large skillet over medium to low heat, add the unsalted butter and stir until it melts.
Add a drizzle of olive oil and stir again.
Next, add all the potatoes we cooked and squeeze the juice of half a lime over everything.
Now, grate the garlic clove, season with a pinch of salt, a pinch of black pepper and a pinch of sweet paprika.
Add the butter and let everything fry for 2 minutes.
Then, flip the potatoes, repeat the seasoning on the other side and let everything fry for another 5 minutes.
Finely chop a sprig of parsley and finish by sprinkling this parsley over the potatoes.
Serve.
