Start by cutting the potatoes into cubes.
In a skillet, add enough oil to cover its bottom.
Once this oil is hot enough, add the potato cubes and fry them until golden brown.
Once you’ve done that, remove them from the hot oil and set aside on a plate lined with paper towels.
In another skillet, add the unsalted butter and stir until melted, add the garlic cloves chopped into small cubes and sauté until golden brown.
Add the yellow and green bell peppers chopped into cubes, season with the salt, the black pepper, the sweet paprika, stir until incorporated.
Now, add the fries, the boiled eggs chopped into cubes and stir for another two 2 minutes.
Add chives and parsley to taste, stir once again.
Finish by adding the grated cheese, cover the skillet and let it all cook for 5 minutes.
Serve.
