1 Carrot
1 Generous Pinch of Salt
Salt to Taste
Black Pepper to Taste
100g of Grated Mozzarella Cheese
Start by grating the carrot using the smaller holes in the grater.
Once you’ve done that, into a skillet over low heat, add 1 drizzle of olive oil, add the carrot and salt to taste, stir well until cooked.
Then set aside.
Into a bowl, add the eggs, salt and black pepper, mix well until combined.
Pour in all the carrot and mix.
Pour all this mixture into a skillet greased with 1 drizzle of olive oil.
Spread well and cover the skillet, let it cook for 7 minutes.
After this indicated time, add the grated cheese to half of the omelet then fold it over this filling.
Heat it up until the cheese melts.
Serve.
