Carrot Omelet

Start by grating the carrot using the smaller holes in the grater.Once you’ve done that, into a skillet over low heat, add 1 drizzle of olive oil, add the carrot and salt to taste, stir well until cooked.Then set aside.Into a bowl, add the eggs, salt and black pepper, mix well until combined.Pour in all the carrot and mix.Pour all this mixture into a skillet greased with 1 drizzle of olive oil.Spread well and cover the skillet, let it cook for 7 minutes.After this indicated time, add the grated cheese to half of the omelet then fold it over this filling.Heat it up until the cheese melts.Serve.

  • 1 Carrot
  • 1 Generous Pinch of Salt
  • Salt to Taste
  • Black Pepper to Taste
  • 100g of Grated Mozzarella Cheese
