Start by peeling a green apple, remove all the skin and the stem then grate it using the large holes of a grater.
Transfer everything to a medium bowl, add the juice of two lemons, the brown sugar and mix all the ingredients very well until combined.
Next, cut the sheet of pastry into 12 equal parts forming squares.
Now, on each square of pastry, add one teaspoon of jam and spread it out.
Add one teaspoon of the apple mixture we prepared to each one.
Next, close the pastry squares by bringing the corners together and sealing the gaps well.
Next, use an electric mixer beater as a guide to cut the edges of the pastry and twist the ends.
Transfer everything to a large baking tray and brush the beaten egg over all the pastries.
Take to a preheated oven at 180° C (350° F) and bake for 20 minutes.
Serve.
