Start by cutting the pancetta into thick strips then into cubes, once you’ve done that, set aside.
Cut the onion into thin strips.
After that, in a skillet, add all the pancetta cubes and fry them until golden brown.
Next, remove all the pancetta cubes from the skillet.
Put all the onion strips into the skillet, add the garlic cloves chopped into small cubes, stir until wilted.
Next, add all the meat again and stir one more time.
Add the ginger root chopped into round slices, the sugar, the peppercorn, the soy sauce and the balsamic vinegar, stir for another 3 minutes.
Serve with white rice.
