Start by making shallow cuts on the piece of pork loin and make sure to use an oven rack as a guide.
Add the softened butter and spread it well.
Then, add the pickled mustard seeds and spread.
Season with salt and black pepper to taste.
Fill it by adding in each cut 1 slice of onion cut in half, 1 slice of bacon and ½ pickled cucumber.
Transfer to a baking sheet lined with parchment paper.
Add the cabbage chopped into thin strips around the meat.
Season with salt to taste, black pepper to taste and a drizzle of olive oil.
Take to a preheated oven at 180° C (350° F) and roast for 1 hour.
Serve.
