Chicken
Wash the potatoes well and cut them with a crinkle cutter. If you don't have it, you can use a regular cutter. Season them with black pepper, salt, sweet paprika and parsley, mix well.
Transfer these potato slices to a baking tray, preferably a nonstick baking tray. Arrange them on top of each other.
Bake in a preheated oven at 200°C (392°F) for 30 to 40 minutes.
Baking time may vary depending on the power of your oven.
Cut the onion into small dices, then cut the peppers and the tomatoes into dices too, set aside.
Cut the chicken breasts into strips then into dices.
Into a pan over medium-low heat, add the oil or olive oil, add the diced onions and sauté until golden brown. Add the garlic and sauté very well, add the chicken dices and stir again until they release some juices and get slightly brown. Then cover the pan and let it all cook for 10 to 15 minutes.
Add the chopped peppers and sauté again for another 5 minutes. Finally, add the chopped tomatoes. Then season with salt, black pepper, cumin powder and parsley. Mix it all together very well until the water dries out.
Take the potatoes out of the oven and spread the chicken over them, but only to the center of the baking tray.
Finally, sprinkle the shredded mozzarella cheese all over the chicken.
Bake in a preheated oven at 200°C (392°F) for 20 minutes.
Serve.
