Into a pan over medium heat, start by adding a drizzle of olive oil. Dice the bacon and the sausage, put them in the pan.
Stir for 3 minutes.
Now add the shredded dried meat. This meat was desalted for 12 hours in cold water, then cooked in a pressure cooker filled with 1 Liter of water for 40 minutes.
Store the juices released from cooking the dried meat, as they’ll be used later.
Once you’ve added the dried meat, mix it all together for 1 minute.
After that, add the crushed garlic cloves and the diced onion, mix it all together very well until slightly brown.
Add the white rice and stir for 1 minute.
Then dice the red and the yellow peppers and put them in the pan.
Dice the tomatoes and put them in the pan.
Once you’ve done that, add the juices released from cooking the dried meat.
If you think it’s necessary, add a pinch of salt.
Partially cover the pan and let it all cook for 20 minutes over medium-low heat.
After this indicated cooking time, sprinkle some parsley to taste.
Serve.
