Syrup
Start by peeling the mangoes, remove all the peels and set the mangoes aside.
Transfer the peels to a blender, add the eggs, the water, the unsalted butter and blend everything until the peels are well crushed.
Then, add the refined sugar and blend until smooth.
Transfer everything to a large bowl, add the wheat flour and mix until combined.
Add the baking powder and mix gently once more.
Transfer everything to a ring cake pan greased with wheat flour and unsalted butter and arrange evenly.
Take it to a preheated oven at 180° C (350° F) and bake for 40 minutes.
Cut the mangoes we set aside into cubes and set aside some of these cubes.
Transfer the rest to a blender and blend very well until combined.
Then, transfer this mixture to a large skillet over medium-low heat.
Add the sugar and mix everything very well until the sugar melts and starts to boil.
Add the mango pieces we set aside and cook for another 3 minutes.
Pour this syrup over the cake we prepared.
Serve.
