Wash the potatoes and peel them, cut them into about 1 finger thick slices, then cut these slices again into strips.
Transfer them to a bowl and add enough water to fully cover them. Set aside.
For the meat, we've used knuckle, but you can use any other of meat you like.
Roll up the steaks and cut them into strips, transfer these strips to a bowl and add the corn starch, spread well over all the strips until the corn starch fully incorporates into the meat.
Dry the potatoes, and in a saucepan, put oil and garlic, then add the potatoes and stir well so that the oil fully incorporates into them, add sweet paprika, black pepper and salt, mix well and cover the pan, let them simmer in low heat for about 10 minutes.
Meanwhile, in a skillet, add oil and sugar, stir the sugar and add the meat, stir well until the meat starts to fry evenly. Add two cloves of garlic, salt to taste, chimichurri and paprika, mix it all together very well, add half a chopped onion, mix lightly and add soy sauce, mix again. Transfer the meat to a glass dish along with the potatoes that are already very soft and tasty.
Serve.
