Start by cooking the eggs for 8 minutes.
Cut the eggs in half and set aside.
In a skillet, add the unsalted butter and stir until melted.
Put the eggs in the skillet, with the yolk facing down.
Season them with black pepper, the curry powder, the sweet paprika and add the grated mozzarella cheese, cover the skillet and let it all cook until the mozzarella has fully melted.
Finish by adding parsley to taste.
Serve.
