Cut the sweet potato into about 1 finger thick round slices, place them in a pan with hot water to speed up the cooking process.
Bring to a boil and let it cook for 15 minutes.
Drain the water and peel the potatoes, if it's too hot, remove the potato skins with a fork.
Transfer the peeled potatoes to a bowl and mash them very well, add the eggs, mix it all together very well until combined.
Add the butter or margarine, mix again, then add the condensed milk and mix.
Add the shredded coconut flakes and mix again.
Finally, add the baking powder and mix.
Grease a baking tray with butter and flour and transfer the mixture to it.
With a spatula, spread evenly.
Bake in a preheated oven at 200°C (392°F) for about 1 hour.
Let it cool down for 10 minutes and unmold.
Serve.
