Whole Chicken Tied to a Lid

Start by cutting up a whole, cutting it open through the breastbone.Next, tie this chicken to a large pot lid.Use strings to do this and make sure you tie it very tightly.Place this lid on a large pan filled with boiling water over medium to low heat and let it cook for 20 minutes.After this time has passed, remove the chicken from the pan, untie it from the lid and set aside.In a small bowl, add the softened unsalted butter, the crushed garlic cloves, the salt and mix.Spread half of this butter all over the chicken skin,Place it in a large skillet over medium to low heat with the skin facing down,Spread the other half of the butter all over the insides of the chicken and fry until the skin is golden brown.Then, turn the chicken over, cover the skillet and let it cook for 15 minutes.Remove it from the skillet and let it rest for 5 minutes.In a small bowl, add the melted butter, the crushed garlic cloves, the lemon zest, the lemon juice, the salt, a pinch of black pepper, parsley to taste and mix everything very well to combine.Transfer the chicken to a baking tray lined with non-stick baking paper.Brush all the butter we prepared over the whole chicken and cover with aluminum foil.Take to a preheated oven at 180° C (350° F) and bake for 50 minutes.Serve.

  • Zest of 1 Lemon
  • Juice of 1 Lemon
  • 1 Teaspoon of Salt
  • 1 Pinch of Black Pepper
  • Parsley to Taste
