Start by peeling the sweet potato. Remove all the skin as quickly as possible to prevent the potato from turning brown and cut it into round slices.
Transfer these slices to a saucepan. Add enough water to cover them.
Turn the heat to medium, cover the pan and let them cook for 15 minutes.
Once the potato slices have cooked through, drain all the water and transfer them to a bowl.
Using a potato masher, mash them well until smooth.
Next, add the eggs and mix until combined.
Add the honey and mix until incorporated.
Now, in a skillet, add one drizzle of vegetable oil and spread well.
Add the mixture we made. Spread it evenly on the skillet.
Cover the skillet and let it cook for 5 minutes.
After this indicated time, flip the pancake using a plate.
Cover the skillet again and let it cook for another 5 minutes.
Transfer the pancake to a nice serving plate, cut it into 4 equal sized pieces and finish by adding honey to taste.
Serve.
