Start by cutting the strawberries - remove the stems, cut them in half, into strips and into smaller pieces.
Then, set aside ⅓ of these strawberries and put the rest in a large skillet.
Add the granulated sugar, turn the heat on medium-low, mix everything very well and cook for 10 minutes.
After this time has passed, in a bowl with the cornstarch, add the water and mix until well-dissolved.
Transfer this mixture to the skillet and mix everything very well until combined.
Transfer everything to a medium bowl, cover with a plastic bag touching the jam and let it cool for 30 minutes.
Then, cut the sheet of puff pastry into 3 equal-sized strips.
Equally divide all the jam between the 3 pastry strips.
Add the strawberries we set aside and moisten the pastry edges with water.
Now, close them by putting the edges together all the way to the end.
Transfer to a baking sheet lined with parchment paper and make two-finger-thick shallow cuts over each one.
Next, brush everything with the mixture of beaten egg and milk.
Take to a preheated oven at 180° C (350° F) and bake for 35 minutes.
Finish by sprinkling refined sugar to taste.
Serve.
