Start by adding the piece of fresh cheese in a large skillet over medium to low heat filled with hot vegetable oil and let it fry on all sides until golden brown.
Remove it from the skillet and let it cool to room temperature.
Meanwhile, in another large skillet over medium heat filled with hot vegetable oil, add the cashew nuts and fry them until golden brown.
Remove them from the skillet and let the oil drain on a plate lined with paper towels.
In a large skillet over medium heat filled with boiling water, add the spinach leaves and let them cook for 5 minutes.
After this time has passed, drain all the water and using a food processor or blender, blend everything thoroughly until it is completely smooth.
Now, cut the fried cheese into cubes.
Next, in a large skillet over medium to low heat, add a drizzle of olive oil.
Add the red onion sliced into strips, the fresh peppers and sauté until the onion turns golden brown.
When that happens, add the rice and stir to incorporate.
Add the blended spinach, the cashew nuts, the cheese and the water.
Season with the bay leaves, the salt and stir once again.
Cover the skillet and let everything cook until all the water has completely evaporated.
Serve.
