Start by cutting the onion into dices and grate the potatoes.
Get some of these grated potatoes and squeeze them to drain all the water. Repeat this process with all potatoes.
After that, transfer all these drained potatoes to a bowl and add the eggs, the diced onion, the wheat flour and the cornmeal, season with salt, black pepper, sweet paprika, chimichurri, oregano and parsley to taste.
Now mix it all together very well until combined. If you notice your mixture is too mushy, add some more wheat flour or cornmeal to it.
Into a skillet over medium heat, add enough oil to cover its bottom.
Then using a spoon, add small portions of the mixture we’ve just made, to fry them.
Fry until golden brown, then flip to fry the other side as well.
Remove fritters from the skillet and let them drain on paper towels.
Serve with your favorite sauce.
