Start by placing the sausages in a skillet, cover them with water, turn the heat to medium and cook for 5 minutes.
After this indicated time, remove them from the water and set aside.
In another skillet, place a drizzle of olive oil, the crushed garlic cloves, stir until golden brown, add the diced onion and mix again until golden brown.
Add the chimichurri and the sweet paprika, mix and add a can of peeled tomatoes, mash well into smaller pieces and add the water, the salt, the oregano and the sugar, mix well again and let it cook for 5 minutes.
After this indicated time, turn off the heat and add parsley to taste, mix and set aside.
In a large skillet, place 2 scoops of the tomato sauce we’ve just made, and spread it well all over the bottom.
Cut 5 sausages in half and place them on top of the sauce, add half of the mozzarella cheese, add 2 more scoops of the sauce, and the rest of the sausages cut in half.
Add the rest of the cheese and add the rest of the sauce we’ve made.
Finally, top it all with parmesan cheese.
Place the skillet over medium-low heat and let it cook for 5 minutes or until the cheese has fully melted.
Top with parsley to taste.
Serve.
