Fried Chicken with Potatoes

Start by cutting the chicken in half, remove the breastbone and cut off the wing tips.Next, cut the onion into small cubes, cut the garlic cloves into small cubes, cut the peeled tomatoes into cubes then chop them into smaller pieces.Now, in a medium bowl, add the onion cubes, the garlic cubes, and the chopped tomatoes.Season with the salt, one pinch of black pepper, the chicken seasoning, the cumin and mix all ingredients together until incorporated.Next, pour this mixture over the chicken we cut earlier, rub it very well by hand so that the spices incorporate into the chicken and set aside.In a skillet over medium heat, add a drizzle of oil, one carrot chopped into thin strips, and sauté this carrot. Add the garlic cloves chopped into small cubes, stir, add the cabbage chopped into strips and sauté again.Next, add the soy sauce, the tare sauce and stir until incorporated.Season with the salt, stir again and set aside.In a skillet over medium heat, add enough oil to cover its bottom.Add the chicken we prepared earlier, let it fry on both sides until golden brown, remove it from the oil and set aside.Next, in the same oil, add the peeled potatoes and let them fry until slightly golden brown.Now, in another skillet over medium heat, add a drizzle of oil, the sautéed mixture we made and spread it until flat.Add the chicken, the fried potatoes, the butter, the bay leaves, cover the skillet and let it all cook for 1 hour.Serve.

  • 1kg of Potatoes 
  • 40g of Unsalted Butter 
  • 2 Bay Leaves
