Stir-fry
On a meat cutting board, start by adding the salt, the black pepper, the fine herbs seasoning mix, the dried rosemary, place the pork loin on top of the seasoning mixture and rub the seasoning into the meat very well.
In a skillet, add the oil and fry the pork loin for 3 minutes on each side.
Once you’ve done that, set aside.
In another skillet or in the same one, add the oil, the unsalted butter and stir until fully melted. Add the onion chopped into small cubes and sauté until golden brown.
Add one pinch of salt, one pinch of black pepper, the garlic cloves chopped into small cubes, stir-fry until golden brown.
After that, open the puff pastry on a table and on top of it, make a layer of bacon slices, just like shown in the video.
Then top the bacon with the stir-fry of onion and garlic, the grated mozzarella cheese and top it all with the pork loin.
Fold the puff pastry over this filling and seal the edges.
Transfer it to a baking sheet lined with nonstick baking paper and brush 1 beaten egg yolk all over the pastry. Sprinkle sesame seeds to taste.
Take to a preheated oven at 180°C (356°F) and bake for 40 minutes.
Serve.
