Beef Croquettes with Rice

Into a bowl, add the rice and the water, mix very well and let it rest for a few minutes.Into another bowl, add the breadcrumbs and the water, mix well until the breadcrumbs absorb the water and set aside.Now into a food processor or blender, add the onion chopped into smaller pieces and add the garlic cloves, process very well into a mush.Now into a bowl, add the ground beef and add the processed onion and garlic, the salt, the egg, the black pepper and the hydrated breadcrumbs, mix well until combined.Then get a tablespoon of the meat mixture and round it, then flatten it slightly.Repeat this process with all the meat.Once you’ve done that, coat each meat ball in breadcrumbs.Finally, into a skillet, add enough oil to cover its bottom and once the oil is hot enough, add the meat balls. Let them fry for 3 minutes each side.Drain the croquettes on a plate lined with paper towels.Into a pan, add the hydrated rice and season with salt, add 600ml of hot water, cover the pan and let it all cook for 5 minutes.After this indicated time, add the diced unsalted butter and the fried croquettes, cover the pan again and let it all cook for 5 to 8 minutes.After that, serve.

20g of Unsalted Butter
