Filling
Start by cutting three chicken breasts into thin fillets.
Cover these fillets with plastic wrap and pound them very well with a meat mallet.
To season, add a pinch of salt, a pinch of black pepper and set aside.
In a medium bowl, add the grated carrot, the grated mozzarella, the natural yogurt, parsley to taste, the salt, a pinch of black pepper and mix everything very well until combined.
Take 1 tablespoon of this mixture, add it to 1 of the fillets we prepared, spread it and roll it up.
Repeat this process with all the chicken and the mixture.
Then, wrap each chicken fillet in a slice of bacon.
Transfer to a medium baking pan and cover with aluminum foil.
Take to a preheated oven at 180° C (350° F) and bake for 40 minutes.
After this time has passed, remove the aluminum foil and add the grated mozzarella cheese on top of everything.
Take it back to the oven and leave until melted and brown.
Serve.
