Hot Chocolate Sauce
For Dissolving the Starch
Into a pan, put the water, the unsalted butter and the sugar, bring to a boil. When it starts to boil, turn down the heat and add the flour, mix it all together very well until a smooth dough is formed.
Transfer this dough to a bowl, spread it out evenly and let it rest for 10 minutes.
Then add the eggs and mix until a smooth dough is formed again.
Add another 2 eggs and mix it all together until combined.
Transfer the dough to a piping bag with a Wilton 1M nozzle.
Make the churros over sheets of parchment paper to make the process easier.
Fry them, and do not add more than 4 churros at a time in the pan. Fry them attached to the parchment papers, but as soon as they start to get lightly colored, remove the papers and fry until golden brown.
Into a pan, add the chocolate, the sugar and mix it all together over medium heat until combined. Add the corn starch dissolved in milk and stir until it thickens slightly.
Have the churros with the chocolate sauce.
Serve.
