Tomato Sauce
Start by adding the peeled and sliced potatoes into a saucepan, add the water until it fully covers the potatoes. Cook until tender, for about 10 minutes.
Drain all the water and transfer the potatoes to a bowl. Add the salt and mash them. Mix very well into a mash, add the cheese and mix well. Set aside.
Into a baking dish, add 1 drizzle of olive oil or oil, spread it, greasing the whole bottom.
Transfer the potato mash to the baking dish and evenly spread it to make sure it's flat. Set aside.
Dice the chicken breasts.
Into a skillet, add 1 drizzle of olive oil or oil, add the chicken, fry until lightly browned, add the onion and the diced red pepper, stir again for 2 minutes. Season with salt and pepper, add ketchup, mayonnaise, barbecue sauce and garlic powder. If you don't have garlic powder, you ca use 1 garlic clove, saute for another 2 minutes.
Mix the tomato paste with the water and pour this sauce all over it.
Sprinkle the with mozzarella cheese and bake in a preheated oven at 180°C (356°F) for 15 to 20 minutes.
Serve.
