Start by cutting the chicken breasts in half, into cutlets.
Place these cutlets on a chopping board, cover them with plastic wrap and pound them with a meat mallet.
Next, arrange them over a piece of plastic wrap, just like shown in the video, and season them with the salt, the black pepper, and top them with the mozzarella slices.
Roll the chicken over the filling, fold the ends of the plastic wrap, to seal them, and take to the freezer. Let it all freeze for 2 hours or until well firm.
After this indicated time, cut the chicken into 1-finger thick round slices.
Next, stick barbecue skewers into each slice – fit about 3 round slices on each skewer.
Repeat this process with all the slices.
Now for breading, start by dipping each skewer in the beaten eggs, then coat in the breadcrumbs.
Transfer the breaded skewers to a baking sheet lined with parchment paper, take to a preheated oven at 180°C (356°F) and bake for 30 minutes.
Serve.
