Peel a potato and wash it well, grate and transfer to a bowl. Add salt, white pepper to taste and the wheat flour, mix very well.
Grate 100g of cheese and set aside.
In a skillet, put some butter and spread it well all over the skillet.
Transfer all the potato mixture to the skillet and spread it over the bottom very well, until it covers the whole bottom.
Cover the skillet and let it cook for 3 to 4 minutes.
Flip the potato and cook the other side as well. With a spatula, make a line to define the center of the potato, add the cheese to one of the halves then fold the other half over the cheese, closing the potato.
Let it cook for another minute if you want to brown it.
Serve.
