
Sauce
Start by placing 3 egg yolks on a large wheat tortilla, then break these yolks and spread them evenly with your hands.
Next, place the tortilla yolk-side down on a baking sheet lined the shredded mozzarella cheese and the shredded cheddar cheese.
Press firmly so the cheese sticks well to the tortilla.
Repeat this process with 2 more tortillas and set aside.
In a large bowl, add the ground beef, the salt, the black pepper, the sweet paprika, the garlic powder, the onion powder, the olive oil and mix everything very well to combine.
Then take a handful of this mixture and roll it into a ball.
Repeat this process with all the meat.
Now, cut one of the tortillas into 3 equal parts forming 3 triangles.
On each of them, add one of the meatballs we prepared and spread it evenly.
Now on each tortilla, add a slice of mozzarella cheese, a strip of 30g of cheddar cheese and roll it up.
In total, we made 9 tortilla croissants.
Then transfer them all to a large baking sheet and brush the mixture of egg yolk and heavy cream over everything.
Take this baking sheet to a preheated oven at 180° C (350° F) and let everything bake for 30 minutes.
In a small bowl, add the mayonnaise, the ketchup, the mustard, the barbecue sauce, the honey, the black pepper, the garlic powder, the onion powder and mix everything very well until combined.
After the croissants have baked, serve them with the sauce we prepared.
