Start by cutting the peeled and seeded pumpkin into slices.
Then, transfer everything to a large bowl, add the sweet paprika, the black pepper, the thyme, the smoked paprika, the soy sauce and mix everything very well.
Cover with plastic wrap and let it marinate for 30 minutes.
After this time has passed, take a slice of pumpkin and wrap it in 2 slices of bacon.
Repeat this process with all the pumpkin slices.
Then, transfer everything to a baking tray lined with parchment paper.
Add the cloves of garlic, a pinch of rosemary and a generous drizzle of olive oil.
Take to a preheated oven at 180° C (350° F) and roast for 25 minutes.
Serve.
