In a large skillet over medium to low heat, start by adding a generous drizzle of olive oil.
Add the piece of pork leg and fry until seared on both sides.
Next, make a cut in the center of the leg piece and set aside.
In a medium bowl, add the ham cut into cubes, the mozzarella cheese also cut into cubes, the sliced pitted olives, the tomato cut into cubes, the cloves of garlic cut into smaller pieces and mix everything very well.
Season with the salt, a pinch of black pepper and mix once more.
Now, stuff the meat we prepared with this mixture.
Secure it with toothpicks and tie it with a string.
Transfer to a baking tray lined with non-stick paper and brush melted butter all over the meat.
Season with a pinch of salt, a pinch of black pepper, a pinch of sweet paprika and spread this seasoning very well with your hands.
Put the potatoes in the baking tray and add a drizzle of olive oil all over them.
Season with salt and black pepper to taste.
Take to a preheated oven at 180° C (350° F) and roast for 1 hour.
When this time is almost up, place a small saucepan over medium-low heat.
Add the dry red wine, the plum jelly and stir until the jelly dissolves.
Then, add the salt, a pinch of black pepper, the sweet paprika and mix until the sauce thickens slightly.
Once the meat has roasted, remove it from the baking tray and cut it into strips.
Then serve it with the sauce we prepared.
