Start by cutting the potatoes into smaller pieces, make sure they’ve been peeled and washed.
Transfer them to a saucepan, add enough water to cover them and let them boil until very tender.
After this indicated time, drain all the water from the potatoes and transfer them to a bowl.
Add the egg and the salt, mash well into a mash.
Add the shredded tuna and chives to taste, the parmesan cheese and the black pepper, mix all the ingredients very well.
Finally, add the wheat flour, mix until combined.
Now get a chunk of this mixture using a tablespoon and round it by hand into a ball. Then coat this ball in some wheat flour and set aside.
Repeat this process with all the mixture.
Once you’ve done that, into a skillet, add a drizzle of olive oil and once it’s hot enough, add the balls, flattening them a bit.
Let them fry for 2 minutes. After this indicated time, flip them and fry for another 2 minutes or until golden.
Drain on a plate lined with paper towels.
Serve with a dip of your choice.
