Start by slicing the chicken breasts into cutlets.
Season them with salt and black pepper, cover them with plastic wrap and using a meat mallet, pound all the cutlets and set aside.
Into a bowl, add the mayonnaise and the mustard, mix well.
Into a larger bowl, add the shredded mozzarella cheese, some parsley to taste and the crushed garlic cloves, mix well and set aside.
Once you’ve done that, spread the mayo-mustard sauce over each chicken cutlet.
Then add 1 tablespoon of the seasoned cheese and roll up the cutlets, repeat this process with all of them.
Into a baking dish, spread evenly 1 drizzle of olive oil and add all the chicken roll ups. Spread the rest of the sauce all over them.
Bake in a preheated oven at 180°C (356°F) for about 30 minutes.
After this indicated time, add the rest of the seasoned cheese and take the chicken back to the oven for another 10 minutes or until the cheese melts.
Serve.
