Filling
Into a bowl, add the eggs, the refined sugar, the salt, the vanilla extract and the unsalted butter in creamy texture, mix all the ingredients very well.
Add the wheat flour and the baking powder, mix well, when you can no longer mix with the whisk, use your hands until a smooth dough is formed.
Transfer all this dough to a 20cm-diameter round baking pan lined with a sheet of parchment paper. Using your hands, flatten this dough in the baking pan, making sure the bottom and the edges of the dough are not too thin nor too thick.
Take this dough to the freezer and let it chill for 15 minutes.
Meanwhile, into a large bowl, add the eggs, the sugar, the vanilla extract and the corn starch, mix very well.
Once that’s done, add the plain yogurt and mix again. Add the peaches chopped into dices and mix gently.
Remove the dough from the freezer and transfer all this filling to the dough.
Add flaked almonds to taste all over the dessert.
Take it to a preheated oven at 170°C (338°F) and let it bake for 50 minutes. Baking time may vary depending on the power of your oven.
Finally, sprinkle some icing sugar all over it.
Serve.
