Caramel Sauce
Into a bowl, add the eggs and whisk them very well.
Pass the beaten eggs through a sieve to remove any remaining lumps or bubbles from the yolks. Once you’ve done that, set aside.
Into another bowl, add the milk, the sugar and the vanilla essence, mix very well.
Add the beaten eggs and mix for 5 minutes.
Once you’ve done that, transfer all the mixture to a pitcher, making sure to pass the mixture through a sieve.
Now pour this mixture into 7 mini disposable aluminum pie cups.
Arrange the mini pie cups into a larger baking pan that fits them all.
Pour in enough water to fill half of the larger baking pan.
Now take it to a preheated oven at 180°C (356°F) and bake for 1 hour. Baking time may vary depending on the power of your oven.
While the mini flans are baking, let’s make a caramel sauce.
Into a skillet, add the sugar and stir well until melted. After that, gradually add the water and keep stirring until it thickens and forms a caramel sauce. When that happens, turn off the heat and set aside.
Once the mini flans have baked through, remove them from the oven and drain all the water left in the baking pan.
Then let them cool until they reach room temperature.
Spread 1 tablespoon of caramel sauce on top of each mini flan.
Serve.
