
Sauce
In a large bowl, add the vegetable oil, the water, the wheat flour and mix using a spoon.
When you can no longer mix with the spoon, knead with your hands until it becomes a smooth dough.
Stop kneading and set it aside.
In another large bowl, add the potatoes and the cornstarch.
Season with the salt, the black pepper, the sweet paprika, the chimichurri and mix everything very well until fully combined.
Then roll out the dough to a thickness that is neither too thin nor too thick.
Add the potato mixture, spread it out and fold the dough in half.
Next, cut it into strips and twist each one.
In a large skillet over medium to low heat, add the vegetable oil and let it heat up.
Add the strips and fry them until golden brown.
Remove from the skillet and set aside on a plate lined with paper towels.
To make a sauce, in a mixer, add the mint leaves, the mayonnaise, the heavy cream, the honey, a drizzle of olive oil, the salt, the black pepper, the garlic powder, the onion powder and blend everything very well until fully combined.
Serve.
