Start by removing the skins of the sausages and placing them in a bowl. mash them very well by hand.
Add the eggs, the onion chopped into small cubes, parsley and chives to taste, the breadcrumbs and mix all the ingredients together very well until combined.
Once you’ve done that, get a portion of this mixture, fill it with one tablespoon of grated mozzarella cheese, cover the filling with the mixture and shape it into a ball.
Repeat this process until all the mixture has been used.
Next, dip the balls in the beaten eggs, coat them in the Panko breadcrumbs and repeat this process one more time.
Repeat this process with all the balls.
In a saucepan, add the oil and wait until it heats up.
Once the oil is hot enough, add 2 breaded balls at a time and fry until golden brown.
Remove from the hot oil and soak up the excess fat on a plate lined with paper towels.
Serve.
