
Sauce
Start by wrapping the piece of pork ribs around a metal grater and tie it with the help of kitchen twine.
Place it in a large skillet over medium heat with boiling water and cook for 10 minutes on each side.
Next, cut it into strips following the bones.
To season, add the salt and black pepper to taste on both sides.
Then, coat everything in the wheat flour.
In a large skillet over medium to low heat, add vegetable oil until it covers the bottom.
Add the ribs and fry until golden brown.
Next, remove from the skillet, add the medium onion sliced into strips, the peeled head of garlic and fry until golden brown.
Add the watercress leaves, the tomato sauce and the water.
Season with the salt, the chili flakes, the chimichurri and stir to incorporate.
Return the ribs to the skillet and add the beer.
Cover the skillet and let everything cook for 10 minutes.
To finish, add spring onions to taste.
Serve.
