Start by removing the bone from the pork knuckle.
Fill the space where the bone was removed with a few sheets of aluminum foil.
Next, attach the meat to a lid using some pieces of string.
Place it in a large pot with boiling water and let it cook for 10 minutes.
After this time has passed, remove it from the pot and remove the sheets of aluminum foil.
Season with the salt, inside and outside the meat, and spread it well.
Add the black pepper, the sprig of rosemary chopped into smaller pieces, the garlic cloves chopped into slices, the onions sliced into strips, the bacon chopped into smaller pieces and the red bell pepper sliced into strips.
After doing that, tie the meat with some pieces of string.
Take it to a preheated oven at 180° C (350° F) and roast for one hour.
Serve.
