Gravy
Start by chopping the ripe pineapple into small dices and set aside.
Now into a large skillet, add a drizzle of olive oil and add the chicken drumsticks and thighs.
Season with salt, black pepper and add the whole garlic cloves, let it all fry for 7 minutes.
After this indicated time, flip the pieces of chicken and season again with another pinch of salt and black pepper, let them fry for another 5 minutes.
Meanwhile, into a blender, add the pineapple dices, the garlic cloves and the orange juice, blend very well for 1 minute.
Once you’ve done that, set this gravy aside.
Go back to the chicken and add the red onion chopped into strips, let them fry until brown.
Add the pineapple dices and pour in all the gravy we made in the blender.
Cover the skillet and let it all cook for 15 minutes.
After this indicated time, top it all with some parsley to taste.
Serve.
