Batter
Start by cutting the red onions in half then into thin strips.
In a large skillet over medium to low heat, add the unsalted butter, a drizzle of olive oil, and stir until the butter melts.
Add the onions strips and sauté until slightly golden brown.
Next, add the brown sugar, the red wine and stir until reduced.
Now, in a large bowl, add the granulated sugar, the salt, the eggs and beat everything very well with an electric mixer until foamy.
Add the heavy cream, the unsalted butter, the wheat flour, the baking powder and beat again until smooth.
Them, add the onions we prepared and mix once more to combine.
In a preheated waffle maker, add 1 ladle of the batter we prepared on each side.
Close the waffle maker and toast until slightly golden brown.
Repeat this process with all the batter.
Serve.
