Fried Potatoes with Bacon

Start by cutting the potatoes into dices then transfer them to a skillet, add enough water to cover them and let them cook for 10 minutes or until al dente.Chop the onion into dices and set aside.Chop the parsley and set aside as well.When potatoes have cooked through, drain out the water and let them cool down.Into a skillet, add the bacon slices and let them fry until golden brown. After that, remove the bacon and set aside.Now fry the onions in the bacon fat until golden brown. That’s totally up to you though, you can brown the onions in a clean skillet instead.Add the vinegar, the salt, the sugar and the black pepper, mix it all together very well and let it cook until liquid dries up.Once it has dried up, add the potatoes, the parsley and the bacon chopped into small dices.Mix very well and let it cook for 3 to 5 minutes.Serve.

Ingredientes

  • 3 Large Potatoes
  • ½ Medium Onion
  • Parsley to Taste
  • 5 Slices of Bacon
  • 50ml of Vinegar
  • 2 Tablespoons of Water
  • 1 Teaspoon of Salt
  • 2 Tablespoons of Sugar
  • Generous Pinch of Black Pepper

Chop the onion into dices and set aside.

Chop the parsley and set aside as well.

When potatoes have cooked through, drain out the water and let them cool down. 

Into a skillet, add the bacon slices and let them fry until golden brown. After that, remove the bacon and set aside. 

Now fry the onions in the bacon fat until golden brown. That’s totally up to you though, you can brown the onions in a clean skillet instead. 

Add the vinegar, the salt, the sugar and the black pepper, mix it all together very well and let it cook until liquid dries up. 

Once it has dried up, add the potatoes, the parsley and the bacon chopped into small dices. 

Mix very well and let it cook for 3 to 5 minutes.

Serve.
