2 Egg Whites
2 Egg Yolks
½ Cup of Refined Sugar (240ml Cup)
2 Tablespoons of Unsalted Butter
100ml of Coconut Milk
1 Cup of Corn Starch
50g of Grated Coconut
1 Tablespoon of Baking Powder
Condensed Milk to Taste
In a bowl, add the egg whites and beat them well until stiff peaks form, set aside.
In another bowl, add the egg yolks, the sugar and the melted butter, beat well until combined. Add the coconut milk, mix, add the cornstarch and the grated coconut, beat again until combined.
Add the baking powder and mix gently.
Add the beaten egg white and mix.
Transfer all the batter to a loaf tin greased with butter and flour.
Take to a preheated oven at 180°C (356°F) and bake for 25 minutes.
Finish by brushing condensed milk and sprinkling grated coconut, to taste.
