Start by cutting the chicken breast in half then open it.
Cover it with plastic wrap and using a meat mallet, pound it until it flattens.
Next, using a small pot lid as a guide, cut it into a circular shape then set it aside.
Now, in a skillet with hot water, add the chicken we prepared and let it cook for 5 minutes.
After this time has passed, remove the chicken and set it aside.
In a medium bowl add, add the wheat flour and the cornstarch.
Season with the salt, a pinch of black pepper, the sweet paprika, the chimichurri and mix very well until combined.
Add the eggs, the water and mix until well combined.
After doing that, transfer this mixture to a bowl and in another bowl, the breadcrumbs.
Dip the chicken breast we prepared into the mixture then coat it with the breadcrumbs.
In a skillet over medium to low heat, add the oil and let it heat up.
Add the breaded chicken breast and let it fry on both sides until lightly golden brown.
Serve it with a sauce of your choice.
