
Start by removing the rind from a ripe watermelon by grating it using a grater.
Next, cut off the ends, separate the white part from the flesh and cut the white part into small cubes then cut the watermelon flesh into smaller pieces.
Next, place the white part in a large pot over medium to low heat.
Add the sugar and stir everything very well until it caramelizes.
Remove from the heat and set aside.
Place all the watermelon flesh we cut earlier into a blender and blend until it becomes a smooth juice.
Then, transfer it to a large pot, straining everything.
Add the cinnamon sticks, the heavy cream and the condensed milk.
Next, dissolve the cornstarch in the water and add it to the pot.
Turn on the heat to medium-low and stir everything very well until it slightly thickens.
Serve it with the caramelized watermelon we prepared earlier.
