Sauce
To Garnish
Into a saucepan, fry the diced bacon, add the margarine or butter and the chopped onion, mix well and sauté until the onion is slightly golden brown. Add the grated carrot, mix well.
Add the diced red pepper, the sweet corn previously drained, the olives and mix well again.
Add the sausage and a pinch of salt, mix well and let it slightly cook, add the diced ham and mix again.
Turn off the heat and add parsley and chives to taste, mix well and set aside.
Into a bowl, add the eggs and whisk them, add the tomato sauce, the packs of table cream and mix it all together very well until combined.
To assemble, into an ovenproof dish, start by adding a layer of precooked rice. Then add half of the sauce we've made and cover it with half of the vegetable filling we've cooked in the pan. Cover these vegetables with another layer of rice. On top of the rice, add the rest of the vegetable filling. Finally, cover it all with the rest of the sauce.
Top it with the diced mozzarella cheese and bake in a preheated oven at 180°C (356°F) until the cheese melts and the eggs cook through.
Garnish with some olives and cherry tomatoes on top.
Serve.
